Vegan Macarons

Okay, I’m a bit late on the macaron trend. They were the hot ticket item a few years ago. I’m sure many people have moved on to some other food obsession. Not me, I have been dying to challenge myself by making VEGAN macarons.

INGREDIENTS


150 ml of prepared aquafaba*


200 grams almond flour


200 grams confectioners’ sugar


Food coloring (optional)


200 grams (1 cup) of white sugar


60 ml (1/4 cup) water


INSTRUCTIONS


Drain the water from a large can of chickpeas into a small sauce pan. Simmer the liquid until it reduces slightly and reaches a consistency similar to egg whites. Measure out 150 ml and set it aside to cool to room temperature. If you have more than 150ml, you can put the rest in the fridge and save it for another recipe.


Sift the almond flour and confectioners sugar into a large bowl. You may have to work in batches, using a rubber spatula to push the mixture through. Once you’ve sifted it all, give it a whisk and make sure it is evenly blended.


Pour 75ml of the aquafaba into the bowl of your stand mixture and set aside.


Stir your food coloring into the leftover aquafaba and pour it over the almond flour and confectioners’ sugar mixture. Mix thoroughly with a rubber spatula until the mixture is completely even. Set this mixture aside.


In a small saucepan, combine the sugar and water and bring it to a boil over medium heat. Bring the temperature of this mixture up to 245F. This can take several minutes but keep a close eye on it because you don’t want it to overheat.


While the sugar is heating up, whip the aquafaba on medium-high speed until they form medium-firm peaks then turn the speed down to low.


Once the sugar has reached 245F, remove it from the heat and pour it into the mixer carefully. It might splatter a bit, but don’t worry about it. Do not scrape down the bowl. Once you’ve poured it all in, turn the speed up to high and beat it for approximately 8-10 minutes. The mixture will be glossy and fluffy.


Grab the bowl of almond mixture and then dump in the meringue. Give this a thorough stir, scooping and turning the mixture over until it is evenly mixed. When it is ready, the texture should be lava-like and fall off your spatula in thick ribbons.


Put half of the mixture into a pastry bag fitted with a 1/2 inch tip.


Squeeze the batter onto the silpat or parchment in 1.5 inch rounds. This may take some practice. The mixture will settle a bit, so don’t worry if they are a bit uneven on top.


Once you’ve filled the tray, you need to remove any air bubbles. The best way to do this is to pick up the tray and drop it back on the counter. This is loud and obnoxious, but it works. Do it twice for good measure.


Refill the pastry bag and repeat the process until all the batter is portioned out.


Set the trays aside to set for an hour or so. A gentle fan blowing over the trays can help the process along. They are ready to bake when you can touch them gently without them sticking to your finger.


Preheat the oven to 210F with the rack set to the middle. This number is a guideline, it may take some tweaking to get the temperature just right.


Bake the first tray for 30 minutes, turn off the heat and let them sit with the door closed for 15 minutes and then crack the door open and let them sit in the oven for another 15 minutes. At this point they should be dry on the outside and the edges. The bottom might be a little soft, so don’t try to remove them right away. Instead, slide the silpat or parchment off the tray and allow them to cool.


Repeat the process with the second tray, making any temperature or time adjustments necessary.


Once they have cooled completely, match them up into pairs based on size.


Using a piping bag, fill one shell of the macaron with ganache or vegan buttercream and then top it with the other shell. Press them together gently.


Once you have filled all the macarons, wrap them in an airtight container and set them to child overnight in the fridge.


They should last about 4 days in the fridge.

Vegan aubergine burgers with avocado mayo

French Fries Recipe

Ingredients 12 cups   grapeseed or canola oil 3  large  russet potatoes Kosher salt Instructions   1. In a tall 8-quart soup pot, heat the oil over high heat until it reaches 300 F on a deep-fat thermometer. Keep the thermometer attached to the side of the pot at all times.   2. Easy Chocolate Ice Cream

THE QUEEN'S CHOICE Ingredients (1 CUP=250 ml)  2 to 2.25 cups cream, 25% to 50% fat cream ¼ cup milk ½ cup cocoa powder ½ cup sweetened condensed milk ½ cup tightly packed brown sugar or regular sugar or half-half of both regular sugar or brown sugar 1 teaspoon vanilla extract or ½ teaspoon vanilla essence Directions Making chocolate mixture: •first take all the ingredients - 2 to 2.25 cups cream (25% to 50% fat), ¼ cup milk, ½ cup cocoa powder, ½ cup condensed milk and ½ cup tightly packed brown sugar. you can also use regular sugar or half-half of both regular sugar or brown sugar. •now take milk in a small pan and add the brown sugar. •keep this pan on stove stop on a low flame and with a whisk or spoon stir continuously till the sugar dissolves. •once all the sugar is dissolved, then keep the pan down. •add cocoa powder. •mix very well. •add the condensed milk and 1 teaspoon vanilla extract. •Mix very well and keep this mixture aside. Pizza Pockets

INGREDIENTS 2  1 ⁄ 2  cups flour 2  1 ⁄ 4  teaspoons  yeast 1  teaspoon salt 1  cup water 💧  2  tablespoons  cooking oil Pizza Pocket Filling 1 ⁄ 2  cup sausage or  1 ⁄ 2  cup  pepperoni  1  cup onion, chopped 1 ⁄ 2  cup green peppers  2  medium tomatoes 🍅  1 ⁄ 3  cup tomato paste 1  teaspoon basil 1 ⁄ 2  teaspoon salt 1 ⁄ 2  teaspoon thyme (Optional) 1  1 ⁄ 2  cups cheese, shredded 3  tablespoons water DIRECTIONS Mix 1 1/4 cups flour, yeast and salt in bowl. Stir in warm water. Beat on low speed for 1/2 minute. Scrape bowl constantly. Beat 3 minutes on high speed. Stir in remaining flour with a spoon. Turn dough out on floured surface. Knead 6 to 8 minutes. Cover dough; let rest for 10 minutes. Divide into 6 parts. (Dough is also excellent pizza dough.) Filling instructions: Brown and drain sausage, green pepper and onion. Triangle Puff Recipe

Ingredients of Triangle Puff 1 Cup Wheat flour 1/2 tsp Castor oil 1 tsp Oil 3 Tbsp Cow milk 1-2 Medium Potatoes 1/4 tsp Dry mango powder 1/2 tsp Cumin powder, roasted 1/4 tsp Coriander powder 1/4 tsp Red chilli powder 1/4 tsp Cumin seeds 1 tsp Black pepper (freshly ground) A pinch of Asafoetida To taste Rock salt How to Make Triangle Puff Mix wheat flour, milk and castor oil (water if required) and knead a soft dough. Cover it with wet muslin cloth and let it stand for 20 minutes. Steam potatoes. Peel carefully and mash them. Heat oil in a pan. When the oil is hot add cumin seeds. When it starts spluttering, add roasted cumin powder, red chilli powder, black pepper powder, dry coriander powder, dry mango powder and asafoetida. Cook for 15 seconds. Add potatoes and rock salt and mix it properly and cook for 1 minute. Remove the pan from flame. The stuffing for the samosas is ready. Roll chapatti and stuff it

Stuffed Bread Roll Recipe

Ingredients 1 CUP=255 ml 2   tsp   oil 1   inch   ginger   finely chopped 2   cloves   garlic   finely chopped ½   onion   finely chopped ½   cup   peas / matar   fresh / frozen 2   medium sized potato   boiled and peeled ½   tsp   kashmiri chili powder / lal mirch powder ¼   tsp   turmeric powder / haldi salt to taste ½   tsp  garam masala ½   tsp   aamchur powder / dry mango powder 2   tsp   coriander leaves / daniya patta finely chopped 4   slices   sandwich bread   white / brown oil for deep frying Cheese and Mayonnaise (Optional)  Instructions firstly, in a large kadai heat oil and saute finely chopped ginger and garlic. also saute finely chopped onions till they change colour. further saute peas for a minute or 2. also add chili powder, turmeric, garam masala, aamchur powder and salt. mix well and mash the potatoes making sure the spices blends well with potatoes. add coriander leaves and mix well. keep aside. furthermore, take bread slices and cut the sides. dip the bread slice
